Yuzu Counter serves one omakase seating a night at 19:30: fish from the Bermeo boats cured with yuzu kosho, rice timed to each guest and Basque greens dressed with txakoli vinegar. When the seating finishes, the bar opens to walk-ins for sake, small plates and a last hand roll.

The bar stays walk-in friendly after 21:00.
